Sweet Potato Breakfast Bowl


This is a super easy, delicious breakfast. It provides both sweet and salty, crunchy and soft, but is healthy and filling! It is also Paleo friendly, dairy free, sugar free, soy free, egg and gluten free!! 


1 small sweet potato

*1 tsp raw  honey

cinnamon to taste

sea salt to taste

1-2 tbsp natural almond butter

1 -2 tbsp nuts & seeds (I used pecans & pepitas)

1 tbsp raisins

Instructions: Poke holes in sweet potato, cover in foil and bake at 375 for 45-60 minutes (sweet potatoes don't take as long as regular potatoes.) If you don't have much time, you can microwave it (obviously not in foil) for 5 minutes, or until fork tender. 

Remove skin from sweet potato and smash with a fork. Mix in honey, cinnamon and salt. Top with nuts, seeds and raisins, and drizzle with almond butter.


This is seriously, so good! There are so many ways you could change and personalize this breakfast to your liking to keep it healthy. You can add different nuts (remember peanuts are legumes and are not paleo friendly- however, in my opinion since they are still a very healthy and tasty fat- use them if you aren't strict paleo!), you can try different  berries or fruit (I think bananas would be fantastic!), and you could use pure maple syrup instead of honey! Whatever suits your tastes. 
*For Whole30, you will omit the honey or syrup.
