Savory Sweet Potato and Apple Hash

             This is a fast and delicious, paleo breakfast for one! I sadly can't eat eggs, which makes breakfast incredibly difficult when you are trying to eat healthy!! If you want to add one or two eggs, do so after the sausage has cooked through. 

Serves 1 


2 tsp ghee or oil of choice

1/4 cup organic low sodium chicken broth

1/2 sweet potato, peeled and diced

1/4 onion, cut into big chunks

4 oz sausage, ground or sliced links

1 small apple, peeled, cored, and chopped

sea salt and pepper to taste

1/4 tsp onion powder

1/4 tsp garlic powder

1/4 tsp smoked paprika


In a large saucepan over medium high heat, add ghee until melted. Add onions and potato. Stir for a couple of minutes until browned. Add sausage and apple and brown, stirring often. Add broth and seasonings. Cover, and cook for another 5-10 minutes or until potatoes are fork tender, stirring occasionally.
