Paleo Spaghetti and Meatballs
Spaghetti squash is one of the best things that I have ever discovered! I use it to replace so many carbs.. it is healthy, easy and doesn't have a strong taste- so my kids and husband will eat it! Win for a mom that has to feed 5 boys/men!!
Ingredients:
1 large spaghetti squash, roasted and shredded (click HERE for my step by step instructions on how to do this)
1 tsp olive or avocado oil
1 small onion, finely diced
1 pound lean ground turkey (or beef or venison or whatever!)
1/4 cup almond flour
1/8 cup unsweetened almond milk
1 large egg
2 tbsp chopped fresh parsley
1 tbsp grated Parmesan cheese (*optional)
1/2 tsp oregano
sea salt and pepper to taste
Tomato Sauce, heated (If using store bought, make sure to check the labels! Many brands contain sugar and other nasty things!
Directions:
Preheat oven to 425. Line a baking sheet with foil or parchment paper.
Heat oil in large skillet over medium-low heat. Add onion, and cook until translucent, about 5 minutes. Add garlic and cook for another minute, stirring constantly.
In a bowl, combine ground meat, almond flour, milk, onion mixture, egg, parsley, cheese if using, oregano, and salt and pepper.
Use your hands to roll the mixture into balls, about 1 inch around.
Bake for about 15 minutes, until cooked cooked through.
Serve over spaghetti squash and tomato sauce. Enjoy!!
