Paleo Enchiladas from Scratch


Ingredients:

paleo tortillas (follow the link for a super easy recipe)

1 pound ground turkey (I love it in this recipe- however, shredded chicken, pork or lean ground beef or venison work well!)

1 can green chilis

sea salt and pepper to taste

1 batch paleo enchilada sauce (follow the link for my easy homemade sauce!)

green onions




Directions:

First, prepare your paleo tortillas and sauce, and preheat oven to 350.

Brown ground turkey in a large skillet. Season with sea salt and pepper to taste. Add chilis and stir until combined. Mix in 1/4 cup of the enchilada sauce and stir. 

Add a little enchilada sauce to the bottom of a 9 x 13 pan, just enough to lightly cover the bottom. 



Add about 1/3 cup of the mixture to each tortilla. Roll, and place seam side down in baking dish. Once all of the filled tortillas have been added, pour enchilada sauce evenly over them. 

Bake for about 30 minutes. 



Top with green onions and guacamole. (Salsa, tomatoes, and cilantro are great too!)
