Easy Paleo Tortillas

If you are like me, and LOVE mexican food, but want to avoid all of the nasty unhealthy junk, these tortillas are for you!! They are gluten, sugar, and soy, free! Plus super quick and easy to make. They store well in the fridge or freezer if you won't be using them right away. 


4 large eggs

2 tbsp warm water

2 tsp ghee, melted

1/2 cup arrowroot or tapioca flour

2 tsp coconut flour

Sea salt


Add eggs, water and ghee to a small bowl. Whisk until eggs are fully beaten. 
Add the dry ingredients and beat to combine. 

Heat an 8 inch skillet over medium heat. Pour in 1/4 cup of the mixture. Roll it around the pan to evenly coat the bottom. Cook for about 1 minute, then flip and cook other side for about 1 minute.
