{Vegan} Pumpkin Cookies

These delicious, melt-in-your-mouth cookies are what fall tastes like! They are so yummy, and also easy to make. (Did I mention that they are vegan?) 


3/4 cup shortening

1 cup granulated sugar

1/4 cup pumpkin puree

1/8 cup blackstrap molasses

1/8 cup pure maple syrup

2 1/4 cups flour

2 tsp ginger

1 tsp baking soda

1 tsp cinnamon

1/2 tsp cloves

1/4 tsp salt

+ sugar for rolling


Preheat oven to 350. In a mixer bowl, add shortening, sugar, pumpkin, molasses & syrup. Mix until combined. Add flour, soda, spices and mix. 

Roll dough into balls, and roll in granulated sugar. Place on a parchment lined baking sheet. Use a glass to gently flatten. Bake for about 10 minutes and let cool slightly before removing to a cooling rack.
