Apple Banana Muffins

Apple Banana Muffins
These muffins are gluten free, soy free, sugar free, dairy free, and egg free! They are paleo and keto friendly. (Did I mention that they are yummy?)
2 ripe bananas, mashed
1 Tbsp melted coconut oil
2 Tbsp vinegar (white or apple cider)
1 1/2 cups almond flour
2 tsp baking soda
1 dash sea salt
1/2 cup chopped apple
Preheat oven to 350. Spray or line muffin tin.  Combine banana, oil and vinegar in a medium bowl and mix well.  Combine almond flour, baking soda and salt.  Add dry ingredients to wet ingredients. Combine.  Fold in apples.  Divide batter evenly between muffin cups. (Will make 9-12) Bake for 16-20 minutes, or until a toothpick in the center comes out clean. Let cool.  You can throw these in the freezer to grab and reheat in the microwave throughout the week! (Serving size is 2)
